I planted 250 onions in January and harvested them with my grandson this past Mother's Day. He has so much fun and counts this as his special duty each year. This is his second year to be my onion harvester. We have now replanted 300 more onion sets and already have another patch of 250 in the waiting that we planted in March.
What do we do with these? We lay them in the sun to dry and then place them in a dry area for all year use. Some are cleaned right away and chopped to go into the freezer for cooking recipes.
I don't generally plant so many onions, but my grandson enjoys this so much that it is worth the extra effort to replant. I will always share with my family and neighbors too.
We load up different vegetables and some of my home made canned pickles and tomatoes and put them in the trailer we made for the four wheeler, and go off to the neighbor's houses and share our harvest. Each basket is full of color and love. We live in the country and not all of our neighbors have the time to have a garden or they do not have the desire to have one. So we make sure that get that extra kick of living in the country by enjoying those fresh crops. This always brings back a return of sharing whether it be that they come with a Christmas jester or just offer some conversation.
I want my grandson to live and learn the ways that I taught my son (his daddy) and the way I was raised. In these struggling times of high prices, we help our own needs as well as our neighbors. This is the way it should be. Maybe if we all slow down a bit and realize what we can do with God's gift of this earth, we can prosper more.
